8 Minute Healthy Mackerel Salad

Ingredients
  • 1 Packet of mackerel
  • 2 Eggs
  • 1 Avocado
  • 1 Packet of green beans
  • 1 Lemon
  • Dijon mustard
  • Rocket salad

I love eating healthy but one thing that I hear people say all the time is that it is impossible to find time to cook food that is good for you. To show that is complete and utter bull and remove any possible excuse for you to just lash a pizza in the oven I've come up with a salad that takes 8 minutes from start to finish and which is good enough to grace any fancy restaurant. It also doesn't have any carbs so grab the ingredients and lash this together..

Instructions

Step 1

You'll probably have a couple of these ingredients already. It'll work with any of the smoked fish you find in the fridge section of the local supermarket but mackerel works best.

Grab a bowl to make the dressing. Add a nice big dollop of mustard.

Squeeze in the juice of the lemon

Stir those two together with a fork and slowly pour in the oil.

You'll end up with a nice smooth dressing. It should have a nice kick to it and a bitter taste from the lemon. A real punch to it.

Peel the avocado. As always don't even thinking about making this with a hard crappy avocado. Smooth, soft to the touch and fresh only.

Remove the stone from the middle.

Slice it in to nice thin slivers. Don't worry if it is a bit brown. It might not look as nice but it'll be nice and soft which is the key.

Lash on a big pot of boiling water.

When it comes to the boil add in the eggs.

Let it come back to the boil and then throw in the green beans. One pot will be fine. Saves on the washing up.

Bring those to the boil for about five minutes.

While the eggs and beans are boiling lash the salad leaves into a bowl.

Add the mackerel

Lash in the avocado

After 5 minutes remove the pot of boiling water and strain off the beans and the eggs. Cool them down immediately with lots of cold water.

When the eggs have cooled down peel the eggs by removing all the shell. Nothing worse than crunching in to egg shells in your salad.

The eggs should be just under hard boiled

Quarter them up

Serve it all up immediately. If you are fast and have the water on boiling in advance this will be ready from start to finish in just 8 minutes. Wicked eh!

I love food like this that takes very little preparation and which is ready in minutes. I mean look at the presentation and the quality of the ingredients and tell me that is not amazing? You have absolutely no excuse now to push that health drive off another day. Amazing textures. Huge flavours and a winning combination of healthy ingredients.
