This tastes like such a treat, you’ll feel like you’re having dessert instead of breakfast. – and better again, if you use coconut yoghurt then you have a paleo friendly meal!
Perfect if you're trying to stay healthy this week but still want to spoil yourself.
All your blueberry crunch ingredients... so healthy!
Get a nice mix of nuts – anything will do, but we went for almonds, pistachios and macadamia nuts which were delicious.
Chop the nuts coarsely, you don’t want them too fine as you need a good bite and crunch to this dish.
Add the nuts to a dry pan for a few minutes to toast on a medium high heat. Watch them carefully as they can burn easily, and you're pretty ruined if they do.
When done, add two tablespoons of honey and a tablespoon of coconut oil, then take off the heat. Stir for around 30 seconds until well combined.
Wash and dry your blueberries.
Spoon your yoghurt in a bowl and top with your blueberries… easy enough.
Top with your honey nuts.
Sprinkle with the bee pollen if you decided to use it.
