- Green beans
- New potatoes
- 2 lemons
- Small splash of mayo
- 1 red onion
The ingredients are really easy to find. Run around the aisles of Spinneys or Carrefour on your way home, and you'll have them in less than 10 minutes.
Put a big pot of water on the heat and throw in the potatoes when it comes to the boil.
Put the salmon on a plate and grate lemon zest over the top of it. The more, the better. Don't go down to the white part of the lemon, because it's bitter.
Add a generous splash of olive oil.
Add some salt and some cracked black pepper, then set it to one side.
Peel the onion and chop it in half. Simple enough so far, right?
Dice the onion up as small as you can. We're talking teeny, tiny pieces.
Pick the parsley leaves from the stalks.
Chop it up until it's nice and small.
Add a small amount of mayonnaise. A little more if you're not on a health kick. This helps bind it all together.
Squeeze the juice of one of the lemons into the mix.
Set to one side. This is going to make up the potato salad.
Put a pan on the heat and let it warm up. Don't put any oil in it whatsoever. Nice high heat and let it warm for about two minutes
When it's hot, put the fish in skin side down (if it has skin).
Now here's the best part. Do absolutely nothing. Don't touch it. Don't play with it. Don't shake the pan. DO NOTHING!
The potatoes should nearly be cooked now. Drop the green beans into the same water to save on washing up.
When the salmon starts changing colour slightly around the edges you can flip it and turn the heat down slightly.
Again, do absolutely nothing. Just let it cook out for about two minutes on this side. You don't have to cook salmon the whole way through, and having it nice and pink in the middle is key.
Take the potatoes and cool them down under running water for a couple of seconds. Just slightly.
Chop them up into nice small pieces.
Add them to the mix you made earlier.
Now a lot of people have trouble plating stuff and making it look nice, so try this. Nice little spoonful of potatoes on the bottom.
Green beans on top.
Salmon balanced on top of those.
A little slice of lemon and you're done. This dish works well with any fish and should only take around 20 minutes.
