- 1 packet of fresh pasta
- 1 Packet of smoked salmon
- 2 lemons
- 1 Corgette (Zucchini)
- 1 Packet of basil
- 2 Cloves of garlic
- Parmesan cheese
The ingredients are really simple. The more you spend on the cheese and the salmon though the better it gets.
Chop the ends of the corgette or Zucchini depending on what part of the world you come from.
Then take some time to chop it in to nice even sized pieces.
Peel the garlic. Really don't need to explain how to do this. If you can't manage it give up and go and get some takeaway food
Using a grater get loads of the zest off the lemon. Don't get the white part only the yellow. The white is bitter and tastes rotten.
You should have a nice few things prepped up now. This is how chefs work, get everything ready in advance and for goodness sake keep the place tidy.
Pick all the leaves off your basil. Don't be stingy here and use a good load. The more the better.
Roll the basil leaves up together and cut them in to little ribbons. As small as you can get them.
Cut the lemons in half. Again not rocket science.
Squeeze the juice out in to a glass or bowl. Make sure to get the rotten little pips out. Nothing worse than biting in to one of those bitter buggers later in your pasta.
Get the salmon out and cut it in to nice thin strips.
Peel a load of parmesan. Again don't be shy with it.
So your chopping board should look like this. Thats all the work done really. Fun time now.
Heat a large pan up with a good amount of olive oil. Slowly cook the garlic, lemon zest and then add the corgette (zucchini) and cook for a couple of minutes over a slow heat.
When they are softening up and taking a little colour chuck in all of the lemon juice.
When your water comes to the boil cook the pasta. This fresh stuff usually takes about 2 minutes max.
When the sauce starts boiling up lash in the smoked salmon and the basil.
When your pasta is cooked spoon it straight in to the sauce. Don't worry if a bit of the water goes in there too as that will help with your sauce.
Coat the pasta with all the sauce and then throw in your parmesan. Season with a bit of salt and pepper and mix it all up and then you are done! The quickest bit of cooking you'll ever do!
It should look, smell and taste insane. This is real restaurant cooking and you'll be doing it at home in 20 mins and looking like a pro!
