- Bag of spinach
- Parmesan cheese (or any cheese really)
- 3 eggs
- Half an onion
- Bit of smoked salmon
- Few chives
It's time to introduce you to a healthy recipe for the weekend. It's called sexy eggs because it's the complete opposite of my normal full fry up. Cook this for the missus and she'll love you. Trying to get a missus? Cook it for her and she might just stay around for the day. Once again, seven simple ingredients and it'll actually be ready in less than 20 minutes.
Chop the onions
Do the same with the chives. The smaller they get the nicer they look.
Chop the nice tips off the asparagus and then chop the stalk bits into small pieces.
Rip up the salmon with your hands into nice little shreds.
That was a lot of chef type work but good news is you are now done. Cooking time.
Fry the asparagus pieces and onions really slowly for about two minutes. There is a fancy term for this but you really don't need to know it.
Add in the spears and cook for about another minute. Chill the chuck out here if you have a big heat on. Slowly slowly
Add in a handful of spinach. This cooks really fast. About 20 seconds. Keep it all moving in the pan.
Pour in your eggs all at the same time and get ready to stir it. Use a spatula or wooden spoon and keep it moving at all times.
You can take it off the heat at this stage but keep stirring. Nothing worse than dry sawdust type eggs so don't overcook it.
Add in the smoked salmon and defo have the heat off at this stage. This is all just finishing touches.
Whack in the grated cheese, a bit of salt and the chives and give it one last stir. Bingo!!
You wouldn't be eating this every week because nothing beats a fry up, but it tastes amazing and is packed full of things that are good for you!!
