- Fresh mint
- 1 packet raspberries
- 1 orange
- 1 lemon
The ingredients are really simple, but the fresh stuff really livens things up. Top tip: splash out on decent granola. It makes a big difference.
Put the raspberries in a bowl.
Slice the top and bottom off the orange.
This is the tricky part where you have to run your knife around the edge of the orange. Don't do this while you're half asleep in the morning! Do it in advance, trust me.
You'll have a lovely peeled orange that looks like this.
Hold it over the raspberries and grab your knife.
What you're doing here is taking out all the segments of orange pulp. This is a real chef-type trick, so pat yourself on the back; you've just learnt how to remove those annoying pulpy orange bits. Pure flesh, baby!
When they're all out, squeeze the orange so all the juice goes into the bowl. That's the fruit mix done (you can make this in advance and just leave it covered in the fridge).
Throw the yoghurt into a bowl.
Squeeze in the lemon juice.
Grab a big handful of mint and pick the leaves away from the stalk.
Scrunch the leaves up into a little ball.
Grab your big sharp knife and cut it into thin little strips. Don't cut yourself!
Stir the whole thing up. Again, you can make this yoghurt in advance so you can just pull it out of the fridge in the morning and pour it on.
To assemble, start by putting some granola in the bowl.
Scoop the fruit mix and a couple of fresh mint leaves shredded on top of it.
Pour on the yoghurt and eat it straight away. Two Minutes to assemble and absolutely delicious!
