Zaatar and Quinoa Recipe #1


  • 3 cups of mixed greens
  • 1 cup chopped tomatoes
  • 1 cup sweet corn
  • 3 chopped cucumbers
  • 1 cup cooked whole wheat couscous
  • Juice of 2 lemon
  • 1 tsp of date syrup
  • Olive Oil (optional)
  1. To cook the couscous: Bring 1 cup of water to boil, once boiled add to couscous in a bowl and cover with plate. This will steam the couscous, it should be ready within 4-6 minutes. Once done, fluff with a fork and add salt and pepper (optional)
  2. Add the couscous and all the rest of the ingredients to a bowl, done!
